Maple Bacon Chicken
Ingredients:
2 fresh chicken breasts, halved horizontally
pinch of salt
pinch of pepper
½ cup pure maple syrup
1 tsp. Olive oil
8 maple-cured thick-sliced bacon, fried but not crispy, crumbled
shredded cheddar cheese
fresh chives, chopped
Rinse chicken and pat dry with paper towel. Put in a greased casserole dish large enough for all pieces to lay flat. Polk holes through breasts. Sprinkle with salt and pepper. Bake at 350 degrees until chicken is almost done at 160 degrees.
Take out of oven and pour syrup (mixed with the olive oil) over the top of chicken. Add bacon pieces and top with cheddar cheese. Bake until chicken is thoroughly cooked at 165 degrees and cheese is melted.
Sprinkle with chopped chives and serve.
