
What's for Dessert? Caramel Apple Sheet Cake

Fall means apples galore! Here is an easy sheet cake recipe that is sure to satisfy any sweet tooth.
Ingredients:
3 cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp ground cinnamon
¼ tsp salt
1 cup packed dark brown sugar
¾ cup white granulated sugar
3 large eggs, room temperature
2 ½ tsp pure vanilla extract
1 cup vegetable oil
½ cup buttermilk
2 medium apples, peeled and chopped
2 tsp flaky sea salt, optional
For frosting:
1 stick salted real butter or ½ cup
1 cup packed dark brown sugar
6 tablespoons buttermilk, more if needed
2 ½ cup powdered sugar
1 teaspoon pure vanilla extract
Spray a 13X9 cake pan with cooking spray and lightly dust with flour.
Preheat oven to 350 degrees.
In a medium bowl whisk flour, baking powder, baking soda, cinnamon, and salt. Set aside.
In a large bowl, whisk together oil, brown sugar, and granulated sugar until well combined. Which one egg at a time into the mixture. Then whisk the vanilla. Gradually add the flour mixture and buttermilk, alternating between the two. Whisk until no flour pockets remain and all ingredients are well-combined. Fold in the apples.
Pour the mixture into the prepared pan. Smooth the top with a rubber spatula and bake for 40 to 45 minutes or until a toothpick inserted into center, comes out clean.
Allow to cool completely.
Frosting:
In a medium saucepan melt the butter over medium-low heat. Whisk in the brown sugar and cook, stir constantly until the sugar is mostly dissolved. Increase the heat to medium and add ¼ cup buttermilk. Bring to a boil. Pour the mixture into a medium heat-proof mixing bowl and whisk in the powdered sugar, vanilla and 2 tablespoons buttermilk until completely combined. If too stiff, slowly add more buttermilk until the right consistency develops.
Immediately pour the frosting over the cooled cake, spreading evenly. Allow to set for at least 1 hour before serving.
Sprinkle with flaky sea salt right before serving, if desired.
