This is one of my family's favorites. It's a meal all on its own, but serving some mixed veggies along with it, makes for a beautiful plate.


Ingredients:


2 lb (1 medium) butternut squash, peeled and sliced

½ cup milk

1 lb. Breakfast turkey sausage

1 egg

2 Tablespoons butter, melted

½ teaspoon salt

Pepper to taste

½ Tablespoon Sage

1 Tablespoon Thyme

½ to 1 cup Panko (breadcrumbs)

½ cup Parmesan cheese, grated


In a medium skillet, brown sausage and set aside.

Mix melted butter, parmesan, seasonings and breadcrumbs and set aside.

In another bowl whisk together milk and egg.

In a 9x13 casserole dish, layer sliced butternut squash and sausage (alternating between to two).

Then pour the milk and egg mixture over the top of the squash and sausage.

Next, spread the breadcrumb mixture evenly over the dish and cover with aluminum foil.

Bake at 350 degrees until squash is soft and tender, about one hour.

Sprinkle more parmesan cheese on top, if desired.

Serve immediately.
